The Restaurant

Le Snack is a small restaurant located on the patio of The Ordinary Fellow Winery in Palisade, Colorado. The Le Snack concept is to offer a full service restaurant experience for guests out of a mobile kitchen. We will be open year round and will utilize the many local meats, cheeses and produce found on the western slope of Colorado to make a fun, seasonal, street-food style menu perfectly paired with the wines made by Ben Parsons.

The Owners

Michael Winston is our Executive Chef and Owner. Born in Raleigh, North Carolina he moved to Durango, Colorado as a teenager. He started his culinary career in Durango, trained in Vail through the Colorado Mountain College Culinary Program and then moved to Denver. In Denver he worked for Troy Guard for many years, started his own food cart “Gastro-Cart” where he was named Specialty Chef of the Year in 2010 by Denver Magazine and finished his time in Denver as Executive Chef for Table 6. Ready for a change and a slower pace of life he moved to Grand Junction in 2019 with Megan and worked for Josh Niernberg at Bin 707 as Chef de Cuisine for 3 years before leaving to start Le Snack.

Megan Silvertooth is our General Manager and Owner. She is from Carefree, Arizona and started her restaurant career at the age of 16 as a pizza cook. She spent many years working at different family run restaurants learning the ins and outs of service until eventually moving to the fine dining world and landing a job as Assistant Manager at Elements Restaurant at the Sanctuary Resort. Megan switched her focus to the wine and spirits world and left The Sanctuary to work at a craft cocktail bar in downtown Phoenix before moving to Europe for 3 years. When she returned to the states she moved to Denver, Colorado and worked for Frank and Jacqueline Bonnano at Mizuna. There, she met her former business partner and opened Denver’s Bistro Barb├Ęs, Temper Chocolates and Souk Shawarma before moving to Grand Junction in 2019 with Michael. She worked at Colterris Winery and Taco Party before leaving to help open The Ordinary Fellow Winery where the idea for Le Snack was born.
